Instructions:
- Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
- Set up three shallow dishes: one with flour mixed with paprika, garlic powder, and onion powder; one with a whisked egg; and one with finely crushed saltine crackers.
- Dredge each fillet in the flour, shaking off excess, then dip in the egg wash, and finally coat with the cracker crumbs, pressing gently to adhere.
- Let the breaded fillets rest for 5-10 minutes.
- Heat canola oil in a large skillet over medium-high heat until it reaches 175°C.
- Carefully place 2-3 fillets in the hot oil, frying for 2-4 minutes on each side until golden brown and cooked through.
- Remove the fish and place on a wire rack over a baking sheet to drain excess oil.
