Ingredients:
-
1tbspunsalted butter
-
5clovegarlic
-
1tspoyster sauce
-
0.5tsplight soy sauce
-
0.5tspfish sauce
-
2ozdry spaghetti
-
0.25ozParmesan cheese
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Instructions:
- Melt the butter in a wok or saucepan over medium heat. Add the garlic and cook, stirring, until fragrant but not browned, about 2 minutes.
- Add the oyster sauce, soy sauce, and fish sauce, and stir to combine. Remove from the heat.
- Meanwhile, bring 1.5 inches of water to a boil in a skillet or sauté pan over high heat. Add the spaghetti, stir a few times to prevent clumping, and cook until just shy of al dente, about 2 minutes short of the package instructions.
- Using tongs, transfer the cooked spaghetti to the garlic sauce, along with any water clinging to it. Increase the heat to high, add the cheese, and toss vigorously until the sauce is creamy and emulsified, about 30 seconds.
- If the sauce looks too watery, let it reduce. If it looks greasy, splash in some reserved pasta water and let it re-emulsify. Serve immediately.
